Hi I’m Brooke Bosse.
I live and love hospitality, and I want to help you do it better.
Hospitality has been at the centre of my life for as long as I can remember.
I am a Dynamic hospitality business owner and consultant with extensive experience leading venue operations, business strategy, team development, customer experience, commercial performance and hospitality growth initiatives.
I am known for combining hands-on operational leadership with strategic business thinking, stakeholder management, and customer focused innovation.
I love being part of a team and bringing new venues to life.
PROJECTS
COROWA RSL - 2023
The challenge they had at this venue, was when they came out of the Pandemic they had a whole new team of staff, morale was low and consistency was becoming a problem.

At the same time, they had a refurbishment of a new space within the club which was going to be a new cocktail lounge.
We worked together to create a new suitable cocktail list, that would incorporate some old flavours with some new ideas but also be easy to follow for new staff members. Over a 12 month period, we created several lists, provided staff training on each new list and general guidance on all things drinks.
After 12 months of working together the team was much stronger and more knowledgeable on what was needed and they now have the ability to do all this in house - great result.
MORRIS WINERY - 2022
The Casella Group are one of Australia’s most iconic group of wines and one of their Wineries is Morris Wines in Wahgunyah, Victoria.

The approach here was all based around a completely new Cellar Door being built (and is still in construction) This new state of the art facility is going to add to the already long list of amazing places to visit in North East Victoria.
The venue already has many thriving elements to their business, so adding all the decisions of the new Cellar Door sent things into overdrive. This venue reached out for help in all sorts of different areas.
We have been working together on the bar design, how the bar should flow, where the equipment should be placed, what equipment is needed, right through to crockery and glassware choices. We have been able to consult on their project as they have needed, some months being more and others being less.
This is what we offer, we have a super amount of knowledge and connections in the industry and have an immediate impact in bringing a new venue to life. We can be the extra set of trained hands that your venue needs for the short or long term consulting.
MERAKI - 2022
Meraki were an established takeaway food business in Albury. They reached out to Be. Hospitality Consultants when they were about to open their brand new premises

These premises were going to incorporate an eat in offering as well as take away, so they were adding not only new premises, new staff, but a whole new area of operation.
There were many areas of focus here
Front of house operations
Open plan kitchen operations - managing customer expectations and staff movements
Communication - informing customers of all the new offerings, while keeping the old customers informed their old favorites were still available
Staff management - rosters, on boarding, training
Finances - budgets, forecasts, daily targets and cashflow
A very hands on collaboration, this was a great project for both parties. Our input and help gave Meraki the base foundation and strong launching pad to keep building from as they settled into their new surroundings.
DUX - 2025
Dux Albury is a showcase of Be. Hospitality Consultants’ end-to-end capability - delivering a full venue build with strategic oversight, operational expertise and hands-on leadership from concept to execution.

Planning began in April 2022, with doors opening in February 2024. Led by Brooke Bosse, this was a fully owner-operated project - overseeing everything from early concept through to day-to-day operations post-launch.
The goal was to create something the region hadn’t seen before: a venue that felt like it belonged in the city, but worked for a regional market.
Every detail was considered, including:

Décor and design decisions-from flooring through to finishing details
Service flow and venue layout, including waiter stations and operational functionality
Brooke remained embedded in the business for 18 months, ensuring the vision translated into a venue that performs as well as it presents.
